    This is truly a hidden gem in Spring Hill, FL. I had the pleasure of eating here last night and the food far exceeded my expectations. The restaurant itself is small and in a rather unassuming location. The inside is quiet and quaint. Very clean and well decorated. The tables are very comfortable and I never felt like the party sitting on either side of us was encroaching. staff was warm and inviting, and quickly offered up specials and recommendations. My wife and I started out with a simple garden salad that was light and flavorful. We were then served appetizers of escargot bourgogne and a seafood crepe. Both were excellent to say the least! I jokingly had to tell my wife that I needed to slow down as I felt as if I was scarfing down the food; it was that good! We then moved onto the main course. We both had the rack of lamb special and the chateau briand. Hands down, the best rack of lamb I have ever tasted. It was cooked perfectly and seasoned just right, not overbearing at all and the meat did not require a knife to cut through. The chateau briand was no different and was served with a delicious bearnaise sauce that complimented the dish nicely. The sides included a carrot and snow pea medley and a potato like casserole (Gratin Dauphinois) that was awesome. To finish it off, we enjoyed a chocolate lava sort of dessert that was big enough to share, but good enough for me to want some more! Overall, this is a nice change from the usual restaurants that are found in this area. I will say that it is on the higher side price wise and the food is perfectly portioned. Meaning that yes, the main courses are in the $20+ price range and you will not leave with a doggy bag. However, I never felt as if I was getting ripped off. The food is fresh and delicious. In that aspect, you definitely get your money's worth. I would definitely recommend this restaurant to anybody that wants to truly enjoy their meal and savor some fine dining!

    Owners Jan and Isabelle have a beautiful thing going here. Do yourself a favor and make a reservation. It's a small place and they do fill fast - especially on the weekends. I've been here for our company Christmas party twice as well as a few date nights with my husband and other couples. Everyone always has a great time. This isn't a place to go in a hurry. Take your time and relax. Monk fish, rack of lamb, Chateaubriand... I'm not sure which thing I have enjoyed more. They usually have great menu specials too. And the desserts... save some room for that or take it to go. The prices are higher but so is the food. They also do great wine parings. I could make a meal out of the carrots and potato au gratin alone. Great special occasion place where you can get dressed up (or not).

    When most people rate a restaurant what they mean is that 5 Stars = "I liked it" and 1 Star is "I hated it". There is no mention of the quality of the food in comparison to other places. So, let me tell you that 4 Stars is, to me, an exceptional restaurant. Many years ago we had a bad experience here, but I think it may have been the company more than the food. I am sure glad that we gave them another try. And a third, which is why I am writing this review. Short story-it's good. Really good. The beer selections are interesting and different but, alas, a recent gluten problem has taken them off of my personal menu. Thankfully, lamb chops remain! I hear the mustard sauce is also good, but tonight I had the chef's sauce, basically an au jus. Delish! Sides were a more-than-acceptable pairing, with their Gratin Dauphinois being heaven-on-earth good, and perfectly cooked carrots and sugar snap peas. Everything was cooked the way it should be and served on the appropriate plate, i.e. the salad came on a cold plate and the entree plate was warm. Presentation was also impeccable. Simple things make a big difference! Look, do yourself a favor if you are in Spring Hill. This is one of the two top places in Hernando County, so try it out and write your own glowing (4 Star) review!

    A hidden gem, indeed! If you're looking for something more upscale and nice, this is the place. Very tasty. Not cheap, but worth it. A great place for a romantic date.

    I can honestly say that I cannot fault this place at all and the other review really surprises me. Last night was about the 9th or 10th time probably that I have been to this restaurant and none of my experiences have been less than 5 star. Last night I had the scallops with bacon and a cream sauce, my wife had the pate and then we both had the lamb for main course. The salad that came out is, to me, a perfect size. No its not going to fill you up and its not the size of somewhere like Carrabba's but, hey, this isn't Carrabbas. This is fine dining. The dressing is delicious ans it gets the taste buds waking up and ready for the appetizer. The scallops (a special) were perfectly cooked with a great sear on them, the sauce was tasty. Put bacon with anything and you have me won. The pate was also great. I am a huge pate fan, normally more smooth than coarse, but this slightly coarse pate is up there with my favorites. And then there was lamb...... I look for lamb everywhere I go in every menu. I love it. I love the smell of it, I love the taste of it. I love the way the fat crisps up and gives a great flavor. Let me tell you that this lamb is THE BEST lamb that I have had anywhere. 8 chops that are so meaty, so tasty. I cannot get enough of this lamb and i never even have to look at the menu when I go, this is a must try. It is served with carrots, green beans, herbed tomato and potatoes, very tasty. The wine selection is good also, big fan of the Malbec. This is, to me, the best restaurant in the county and I think that everyone should check it out.

    That. Was. Awful. I even don't feel like wasting my time on giving a full description of my dining experience... Yes, It was THAT BAD that as soon as I left $120 (with tips, for two) the place I ran to the Italian store and bought me some food and a dessert. :) The one star is for the the First restaurant in my entire life I came out hungry. In America! I could not f***ing believe it! :) Even after having an appetizer, "salad" (sorry, but I'd be ashamed of calling one huge wilted lettuce leaf topped with some-day-might-have-been-fresh corn kernels (previously frozen?), 1/100 of tomato & 1/1000 of cucumber topped with a dollop of something looked like dressing) and an entree for $26.00 that I could not swallow. The food with fancy name "Veal a la Blue" was a mess of some pieces of meat, not sure what kind, hardly 1.5oz total weight, in salty white liquid substance and topped with two tablespoons of canned crab meat or I'd rather say "crab jerky" because the crab was dried out under the broiler. Yuck! Overpriced. Way too much overpriced. Lack of service. Because there is nobody to serve except the owner (who could use some fresh make-up and dress up a little bit so she did not look like she's just came out of doing gardening) and another lady (who did not pay much attention to guests either). They forget about you as soon as your last item you ordered is served. There is no choices of salad or side dishes in the menu. Everybody gets the same SOS. :))) Salty, tasteless, tinyyyyy (not even small), disgusting-looking plates of over-salted food. All (!) the entrees are served with the same huge chunks of boiled carrots and green bean and over-salted overcooked baked potato slices. So all the tables served with the same looking food makes you think you are in a buffet restaurant. Washed out, some-day-were-smooth table cloth and napkins made of artificial fabric with running hitches. Foggy wine glasses & strange looking bottles of Pouilly Fuissé. Noisy place. Full of FL age folks with walkers parked next to my wine cooler. Cute... If you can, do yourself a huge favor and pass by this place. Save your money.

    Was super excited to try Nouvelle Cuisine and went to celebrate a special day with some friends. My friends had dined their many times before and had rave reviews about it.... sadly my opinion was not remotely the same. Their prices are steep and I'm no cheapskate or anything, I was disappointed that I couldn't get the french onion soup instead of a salad or the soup of the day but they insisted that even with an upcharge they couldn't do it. I agree with the other poster that the salad is a huge let down. It did consist of some sad looking wilted lettuce and a few frozen kernels of corn. Entree's were also not up to the hype, I ordered the Veal Al a Blue and it was really a huge let down, it had maybe 4 small cubes of veal and the saltiest sauce sprinkled with what looked like canned crab meat. My friends had the lamb rack and also a Filet and both looked very nice but the lamb also was tough when our friend was cutting into it. The best part of the meal was the Potato's Daphonois and the buttered carrots. Even the french bread was nothing spectacular. I've had real European cuisine and some high end places including The Greenbrier but this was completely overrated. Will not be going back.

    Lunch was wonderful! I had the Seafood Crepes and salad. My guests had the Salmon. Everything was well prepared and nicely plated. If your a "chain" person you might want to skip this one, the portions are perfect not super size ;)

    As good as it gets is a perfect description of this jewel in a strip mall in the middle of nowhere (Sorry Spring Hill Friends but that's coming from a ten-year Tampa resident). The food here is exceptional and while I read comments about "slow service" I didn't find that to be the case when we ate here on a Thursday evening. If there was any "wait" such as for the crème Brule it was probably because everything is prepared to order and any "wait" is well worthwhile. You can sip from their selection of reasonably priced wines. I enjoyed a Robertson's Chardonnay from South Africa which meshed well with a fantastic gag Grouper! My brother-in-law being the birthday celebre got the last rabbit and truly enjoyed his first-time experience. The appetizers were both 10+ shrimp and seafood crepe! They also have an extensive list of beers but we'll save that for a lunch visit in the future as we will absolutely return here.

    The food and drink at this restaurant provides local Spring Hill residents a gourmet opportunity from the many chain restaurants in this part of Florida. The food and service were very good with prices that are reflective of the quality delivered. The menu is more extensive than we expected with a good variety of daily specials. Meats and vegetables were prepared perfectly with their signature lamb being superb. We had some hits and misses with the appetizers. The soup of the day was a disappointment and the included salad needs improvement. The wine and beer selections were excellent. Overall we would provide them 4 out of 5 stars. One final word, if you do not know or have never heard the word gastronomy then you probably would not be a good fit for their expectation of a customer. Dinner is expected to be a 1.5-3 hour food experience.

    I was very excited to try this restaurant and was let down:(. I dined there for lunch a few weeks ago and, while the food was fair, the service wasn't. I felt ignored and unappreciated. I may not be a "regular", but I could've been. For an expensive meal, every customer should be treated nicely. I was a server. I understand that staff may be busy, but the restaurant wasn't busy the day I was there. And, the owner, at least I think that was the owner, went around talking to a few of the tables.

    nouvelle cusine , wonderful, delish, place hidden away in springhill. i've been there soo many times! best french , belgium food you,ve ever tasted! superb, lamb, salmon, veal, duck etc! great ambience as well! chef kinds and isabelle roos are the greatest! also divine french wines, very romantic or just great place to treat yourself, great takeout too! i give them 5 stars! champagne lady

    Was pretty much ignored for the first 20 minutes. But the ambiance in here is unlike the majority of other brooksville/spring hill establishments, though music would dramatically improve the experience. The carrot soup was yummy. But it was over an hour before we got our food. The place was not overly busy, but the wait was long anyway. Then the food arrived. Ohmygoodness. Absolutely delicious. The chicken tender, the shrimp in peppercorn sauce was worthy of plate licking, the veal incredible, and the duck outstanding. The chocolate walnut cake was perfection, not too sweet and just perfect. The crime brûlée was the best. The BEST. and we've tried it in many restaurants in the big cities. None compared. When you come, be prepared to wait, but the food will make up for it!!

    I simply love this restaurant! Food is delicious! and the atmosphere is enchanting. Each dish is singularly crafted by the most talented chef in entire Tampa Bay. Waitresses and the hostess are very friendly and knowledgeable. They have an exquisite collection of Belgian beer and French wine not found anywhere else in town. Highly recommended place for formal, and semi formal dine in.

    After an ecxiting afternoon with my husband and my daughter about one hour north of our hometown we took the chance and a little detour to finally stop at this "little Gem" we have heard about long time ago but never made it in. Since I come from Europe myself I love freshly prepared good food european style. Tonight we stopped and tried to satisfy our sweet tooth before going back home. My daughter was craving good crepes or delicious cheesecake while my husband showed interest in a good coffee specialty. When we entered the Restaurant I immediately got the feeling of beeng ignored. We finally got greeded and seated at one of a few open tables and the waitress served water. A few minutes later Mademoiselle Isabelle (the owner) came to our table to inform us about all the daily specials. It was quite hard to interrupt her but when I had the chance I told her that we were craving mainly desserts. She dissapered for a few minutes and retuned to tell us to leave the Restaurant because that table we sat on had a reservation and she could not serve us "only desserts"! Let me remind you there were at least 6 empty tables! Excuse me? I have been working in the restaurant business for over 20 years and I am a Restaurant owner myself. My customers are my # 1 priority! I have NEVER and would NEVER refuse to serve a customer ONLY dessert. My goal is CUSTOMER SATISFACTION! As a suggestion to you Mademoiselle Isabelle ... do NOT (!) judge a book by its cover! You might not like casual clothes (blue jeans) but that was our dress code for today. We will NEVER return, and we will most definetly not be recomending you to any one.

    Wow! You'd never know this place was there, but you walk in from a little strip shopping area into another world. I was here with a friend I was visiting in the area - The boys went fishing and we went to lunch at Nouvelle Cuisine. The server (owner) suggested a wonderful wine, and her suggestion was right on! I had the soup de jour -- which was cream of cauliflower. Absolutely delightful! I had the seafood crepes for lunch. Again very good. I take off one star because the day that we were there the food delivery was kind of slow. Not bad, but there weren't but two other tables there (that came in a while before us) so I'm not sure what the delay was. Either way it was worth the wait. Lunch prices I would consider reasonable. I hear its a bit higher for dinner. Don't judge a book by its cover - step inside and enjoy a enchanting meal!

    The best fine dining in the Spring Hill area. Anyone who says otherwise is probably from another restaurant trying to drive people away from Nouvelle. The rack of lamb is the best I've ever eaten, and I've eaten at a lot of fine restaurants all over the country. And to pick on Isabel's dress is a low blow. She's a warm, caring owner with husband Jan, the chef. The entrees come a bit slow, but that's because the chef prepares each meal individually. Yes, it's a bit pricey compared to other local restaurants, but it's a great to bring someone for a special occasion. By far, the best restaurant in Spring Hill. We go there 3-4 times a year.

    We went there last night and I would honestly say that the dining experience was horrendous! For starters, they wouldn't seat us in the empty booth that we asked for. Then, when trying to sell us on the 'daily specials' she conveniently FORGOT to include the price. I must say, that in real upscale restaurants which Nouvelle Cuisine tries to pass themselves off as, the 'specials' are either written on a blackboard or the price is given after each selection is mentioned. Next, although the bread consisted of a a few small pieces of non-descript something, we had to continually track down our server to request some more - same with our empty water glasses. Again, in a REAL restaurant, the server comes over to ask if there is anything else that we would like. Not here! Service is deplorable. Then when the bill came, we realized that she had brought us the wrong dish, yet insisted they should charge us for the special which was significantly more than the dish on the menu which we had actually ordered. Again, that is not how classy restaurants handle these types of mistakes! I should have become suspicious when earlier in the evening, a couple loudly walked out complaining about all of the things that were soon to be in store for us. We echo their sentiments "We will NOT return". Nouvelle Cuisine is what we call 'a pretender' - that is an unrefined group of hicks trying to pass themselves off as something that they know nothing about - which in this case is running a restaurant. I would suggest that they go back to Restaurant & Hospitality school to learn how to actually treat a customer and in the process, how to run a restaurant.

    So, as someone who has dined in New York, Paris, London, and Singapore, I always love great food. But even better than great food is finding it in places you couldn't possibly expect it. Imagine my surprise at finding an authentic European restaurant in the heart of the middle of nowhere, Florida. My companions dined on dishes like coq au vin, while I enjoyed an amazing rack of lamb. Could I eat an a Belgian restaurant and not eat Belgian waffles for dessert? (rhetorical question) Highly recommended. Will return next time I'm in town.

    This is by far the best restaurant in the area. You will not be disappointed should you be lucky enough to discovery this treasure. Isabelle is the best at helping you decide on meal, wine, and the best beer selection of any establishment around. The only issue is trying to decide what to order, as this is a truly original restaurant experience!
